Château Haut-Bailly is a producer that was officially founded in Pessac-Léognan, Graves in the 17th century, but records show that vines have been cultivated on the slopes of this estate since 1461.
Under technical director Gabriel Vialard, the estate blends tradition with innovation. A prime example of this was the installation of a fully gravity fed winery, launched in 2021, that aims to maintain a connection with its traditional roots. Some of the vines are over 120 years old and contribute to the wine’s complexity. The 28 hectares of vines are planted to Cabernet Sauvignon (65%), Merlot (25%) and Cabernet Franc (10%). This blending of varieties optimizes the gravelly-sandy soils found in Graves which leads to wines of refinement and aromatic complexity. This restrained style sets the region apart from the more muscular wines of the Medoc but maintains a history of terrific ageing.
